Vegan kale pesto recipe

One of my favorite vegetables is kale! I love it in juices, smoothies, kale chips, baked, …
I try to incorporate this vegetable in to most of my dishes. It’s also super healthy!
But sometimes I crave comfort food and one of my favorite comfort foods is pasta pesto.
So why not make a healthy version?

This is my super easy kale pasta pesto dish with only 8 ingredients:

  • 2 cups of kale (without the stem)
  • 2 cups of fresh basil
  • 2 table spoons of nutritional yeast (replaces the parmesan in non-vegan pesto)
  • 3/4 cups of pine nuts (you could replace this partly by almonds)
  • 1/2 cup olive oil
  • 1 table spoon of lemon juice
  • 1 clove of garlic
  • 1 tea spoon of salt

Add everything to the food processor and wait until the pesto becomes fluffy and creamy. Serve with some roasted pine nuts on top.
